Glazed Pecan Squash Rings

  • 1 medium acorn squash (about 1 lb.)
  • 1/4 cup orange juice
  • 2 Tbsp. maple-flavored or pancake syrup
  • 1/2 cup Post Bran Flakes
  • 1/2 cup pecan pieces
  • 1/8 tsp. ground nutmeg


  1. Preheat oven to 400°F. Trim and discard ends from squash, then cut squash crosswise into 1-inch-thick slices. Scoop out and discard seeds. Place squash rings in 13x9-inch baking dish.
  2. Mix together orange juice and syrup; spoon evenly over squash rings. Sprinkle with cereal, pecans and nutmeg; cover with foil.
  3. Bake 20 min. or until squash is tender. Uncover; continue baking 2 to 3 min. or until pecans are toasted.

Make it Easy: To soften the squash before cutting into rings, pierce squash in several places with sharp knife, then microwave on HIGH 3 to 5 minutes or until slightly softened.

Note: Cutting the squash into rings shortens the baking time and makes the squash easier to serve.
