Coconut Crunch Cookies

  • 1-1/4 cups flour 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 cup old-fashioned or quick-cooking oats
  • 1/2 cup (1 stick) butter
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup Honey Bunches of Oats Cereal
  • 1-1/4 cups coconut
  • 1/2 cup raisins


  1. Preheat oven to 350ºF. Mix flour, baking powder, baking soda and oats; set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, beating until well blended after each addition. Add cereal, coconut and raisins; stir until well blended.
  2. Drop heaping teaspoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
  3. Bake 14 to 16 min. or until lightly browned. Cool on baking sheets 3 to 4 min.; remove to wire racks. Cool completely. Store in tightly covered container at room temperature.

Tips and Suggestions

Variation: Prepare as directed, using Post Raisin Bran Cereal and/or substituting dried cranberries for the raisins.

Special Extra: Add 1/2 cup chocolate chips or your favorite chopped nuts to the cookie dough before baking.
